    Update: this juice is now about halfway through fermentation in barrels. Sugar, acid, phenolics and flavors are about perfect for sparkling wine. In a year like this, winemakers wish that the US market would support the production of more high-end Methode Champenoise wines!
    We will put half of it through MLF, not for acid reduction but for flavor complexity. Early MLF in oak will not build up any discernible buttery character (attributable to the ester Diacetyl) but will add some texture and flavor complexity, especially inasmuch as it will be conducted in barrel.

    One of our default records during vintage is “A Love Supreme” by John Coltrane, but it’s a bit early in the game for that. What you hear, here, is the great Pat Metheny.
    Banned from the winery, by my decree, and on pain of death: Hootie and the Blowfish, John Cougar Mellencamp.

    Commiserations to Tiger Woods, who could have had *anyone* play at his wedding, but who inexplicably chose Hootie and the Blowfish.

    Shouldn’t the music be chosen to match the varietal and the style being pursued?
    Peter, perhaps you can choose an artist and song to accompany each of your wines from this vintage!

    After a vintage like this one, I’d say the soundtrack should be by Foghat.
