Those letters represent one important and potentially game-changing word. Spontaneous. In 2009, Reinhardt decided to experiment with natural, or spontaneous, fermentation. He created a small batch of riesling, only 80 cases, for the purpose of studying the differences between the usage of cultivated yeast and native yeast. The New York Cork Report Tasting Table — June 21, 2011

Lucas Vineyards 2009 Dry Riesling ($14): Intense fennel frond aromas are backed by grapefruit, lime and green apple notes. Dry with fresh, citrus-juicy acidity. Lime and fennel flavors dominate with just a little gunflint-smoke. Really nice value.
